Easy Quinoa Salad.


This salad is a discovery for myself. I loved quinoa like never before. They are suitable to eat both alone as a side dish.


Ingredients:

1. 1/2 cup cooked quinoa

2. 6 cherry tomatoes, chopped in half

3. 1 lime

4. 1/2 cup arugula

5. Salt and pepper

6. 1/2 cup red onion

7. Mint

8. 2 ripe avocados

Instructions:

In a medium bowl stir together cooked quinoa, avocados, chopped tomatoes and onion. Season with lime, salt and pepper. Decorate with arugula and mint.
